Default Removing polyurethane/varnish/shellac?

I just bought a nice Quality carbine with a Rockola barrel. The rifle came with a lot of goodies, works fine, and shoots fine.

However, some previous owner applied a really nice coat of polyurethane to the stock. Anyone know how to remove this stuff without damaging the stock or driving myself nuts?
